早餐术语大放送

1.关于蛋的几种做法

A. 煎蛋Fried eggs：

美式煎蛋的做法是把黄油涂在平底锅，开中火，打上鸡蛋，加一点点水，用蒸汽和黄油一起煎熟鸡蛋。而这样的煎蛋也有几种类型：

Sunny side up：只煎单面，蛋黄不凝固，上面蛋白不凝固。俗称“太阳蛋”。

Over easy：煎双面，蛋黄不凝固，蛋白凝固。

Over medium：煎双面，蛋黄凝固，蛋白凝固。

Over well：煎双面，蛋黄、蛋白完全凝固。

Over hard：煎双面，戳破蛋黄，蛋黄完全凝固，蛋白完全凝固

B：水煮蛋

带壳水煮蛋Boiled eggs，分为以下两种类型：

Soft boiled：煮3分钟熟度，蛋白凝固、蛋黄流质；

Hard boiled：煮5分钟熟度，蛋白、蛋黄全凝固。

去壳水煮蛋Poached eggs：

也叫“水波蛋”，做法是将蛋打在将沸的水中煮到适当熟度，保持它圆润完整的外观，凝结的蛋白包裹着金黄的流质蛋黄。在美式早餐中它也会以班尼迪克蛋Eggs-benedict的出现，通常一份餐点会有两个蛋。放在英式马芬English muffin和火腿或培根上，淋上金黄浓稠的荷兰酱Hollandaise sauce，吃的时候把蛋切开，让流出的蛋黄汁蘸上面包和肉片吃。

Ps: “水波蛋”和我们平时说的“温泉蛋”还有一点点区别，温泉蛋是低温慢煮出来的，蛋白、蛋黄性质相近，都处在半凝固状态。而“水波蛋”的蛋白凝固，蛋黄却是流质的。

C. 炒蛋Scrambled eggs

美式炒蛋和中式的区别是用黄油温火炒，通常不放盐或葱花等调料。端上来后，你需要自助撒盐、胡椒粉或番茄酱、辣椒酱、碎芝士等，随心情自由搭配。

D. 煎蛋卷Omelette

在中国的美式Brunch餐厅，会把这种煎蛋卷称为欧姆蕾蛋，它有点像日本的厚蛋烧。通常取三颗蛋，煎好厚厚一层蛋皮，里面包上蘑菇、火腿、培根、青椒、芝士、番茄、洋葱、芦笋甚至牛排等做成的馅料。口感复杂，属于地道美式快餐。

2.容易混淆的饼

A. 美式松饼 Pancake

也叫“热香饼”，主要是由面粉和蛋做成面糊，用油煎成约手掌大小的饼，像铜锣烧那样有一定厚度，口感微甜。吃的时候店家会为你准备好糖蜜Molasses搭配着吃，也有加果酱、奶油、水果的松饼。不过如果不搭配饮料，吃上去还是有点干，非常管饱。美国有的Pancake连锁店，无论点什么，都会送上一份Pancake，确实实惠。

B. 英式松饼English Muffin

也叫“英式马芬”，就是麦当劳麦满分里那种松松软软、气孔很大的面包饼。源于英国，流传到美国后得到了发展。但不同于那种用杯子烤制的杯型甜蛋糕——马芬Muffin，烘烤的时候总要在“糕顶”放些东西，比如打碎的蓝莓或巧克力。

3. 容易混淆的面包圈

A. 甜甜圈Donut （Doughnut）

Donut是dough（生面团）和nut（坚果）的合成词，是来源于欧洲的油炸点心。在国内也被译为“唐纳滋”——面包呈中空的环状，经过油炸制成，表面覆满各种口味的果酱、巧克力酱、坚果碎、糖霜，或是中间灌入奶油。甜甜圈在美国种类繁多且复杂。这种在国内看来是小点心的高热量食物，可是美国人民早餐的主食，他们买起来总是半打、一打去买的。

B.贝果Bagel

和甜甜圈长得很像，但在口感、热量上的差别就大了。贝果是来源于犹太人的硬面包圈，随着移民进入美国，后来成为纽约健康早餐的代表食物。贝果是面团经发酵揉成圈形后放到水里煮，再烘烤制成。外皮烤得越硬脆，内里面包的风味就越浓郁，质地也越柔韧。老美吃贝果会横切成两个圈，在中间加料夹心。在北美地区还分为蒙特利尔贝果Montreal bagel（甜味）和纽约贝果New York bagel（咸味），类似汉堡。

C：吐司和面包

Toast with butter是指端给客人时，吐司和牛油是分开的；Buttered toast是指把牛油涂在吐司上面之后，再端给客人。

D：饮料

White coffee是指加奶精(cream)的咖啡，等同于法语中的café au lait，较不伤胃。不加奶精的咖啡就称为Black coffee。

在国外，tea（茶）一般是指红茶而言。如果要绿茶则须指明green tea。早餐的咖啡和红茶都是无限制供应。

E：其他常用单词

Corn Bread 玉米面包

Plain Muffin 松饼（须趁热吃，从中间横切开，涂上牛油、果酱、蜂蜜或糖汁）

Corn Muffin 玉米松饼

Biscuit 饼干

Croissant 羊角面包（英国人则称为crescent roll）

Waffles 压花蛋饼（可涂上牛油或枫树蜜汁，用一只叉子连切带叉即可）

Chocolate Doughnut 巧克力油煎圈饼

Jelly Doughnut 果酱油煎圈饼

Plain Doughnut 素油煎圈饼

Powdered Sugar Doughnut 糖粉油煎圈饼

Buckwheat Pancakes 荞麦煎饼（通常有三片或四片，吃时将牛油放在热煎饼上使其溶化，然后将枫树蜜汁涂在上面，用叉子边割边叉着吃）

Hot Cakes with Maple Syrup 枫树蜜汁煎饼

French Toast 法式煎蛋面包片（这是将吐司沾上蛋和牛奶调成的汁液，在平底锅中煎成两面发黄的吐司，吃时可涂果酱或盐及胡椒粉）

纽约时间比加州时间早三个小时，

New York is 3 hours ahead of California,

但加州时间并没有变慢。

but it does not make California slow.

有人22岁就毕业了，

Someone graduated at the age of 22,

但等了五年才找到稳定的工作！

but waited 5 years before securing a good job!

有人25岁就当上CEO，

This song of mine will touch your forehead like a kiss of blessing.

When you are alone it will sit by your side and whisper in your ear, when you are in the crowd it will fence you about with aloofness.

My song will be like a pair of wings to your dreams, it will transport your heart to the verge of the unknown.

It will be like the faithful star overhead when dark night is over your road.

My song will sit in the pupils of your eyes, and will carry your sight into the heart of things.

And when my voice is silent in death, my song will speak in your living heart.

Let my love, like sunlight, surround you and yet give you illumined freedom.

你若爱她，让你的爱像阳光一样包围她，并且给她自由。

这首诗的题目为何不叫“我的爱”呢？也许“歌”比“爱”来得更优美，音符相对于文字更容易让人接受。

泰戈尔的诗歌永远这么温柔可人，更何况是对孩子说的心里话：在你需要祝福之时给予你一吻的祝福；在你孤独之时，萦绕于你耳畔给予陪伴；当你向往远方，成为你的梦翼；你遇到黑夜，成为你头顶指引的星辰；当你眼神迷茫，带你穿过纷繁的表象，进入事物的中心。当“我”的生命结束，这首歌将依然留存于美丽的灵魂之中并传扬下去。

这首“歌”的内容就是诗人对孩子的爱。这份爱听来简单，却不似“常情”。它不要求你成为“人群的焦点”，只希望你能时刻保持一颗超然的心；它支持你的梦，虽然你的梦指着某个不知名的方向；它不会叫你避开黑夜，只在夜色中默默为你照亮前路；它不妨碍你观感万物，唯助你看清万物的本质。它甚至试图让沉睡于你心中的自我超越生命的局限……

这份“如山”的爱被诗人用歌的方式轻轻唱出，正如那些真正伟大的爱并非“以爱之名”——它不只教会你真理，还要耐心地陪你走过，这生命中的点点滴滴。

配乐剪辑自电视剧《少帅》的主题曲《在此刻》，是流行音乐家、歌手黄大炜睽违10年后献给已故外公张学良将军的最新创作，小提琴演奏为小提琴家吕思清。琴键声有如素月清辉，临照一只暗藏于墙角的夜蔷薇。窗台有人独坐、沉思，孤光自照，肝胆冰雪。

Example: just as I had cancelled my application to go abroad, I had a promise of money for my fare. It was a case of after death, the doctor.

2. After praising the wine they sell us vinegar.

Explanation: to offer to give or sell something that is inferior to what you claim it to be.
Example: that fellow completely misled us about what he was capable of doing. After praising the wine, he sold us vinegar.

3. All is over but the shouting.
大势已去
Explanation: finally decided or won; brought to the end; not able to be changed.
Example: after Bill’s touch down, the game is all over but shouting.

4. All lay load on the willing horse.
人善被人欺，马善被人骑
Explanation: a willing horse is someone who is always doing things for others. Very often the implication is that others impose on him.
Examples: the trouble is you’re too good-natured and people take advantage of it. all lay load on the willing horse. You will have to learn to refuse people who ask too much.

5.anger and haste hinder good counsel.
小不忍则乱大谋
Explanation: one can not act wisely when one is angry or in a hurry.
Example: you should calm down before you decide the next move. Anger and haste hinder good counsel.

6. As poor as a church mouse
一贫如洗
Explanation: to be exceedingly poor, having barely to live upon.
Example: he has a large family, and is poor as a church mouse.
Note: a church is one of the few buildings that contain no food.

7. A word spoken is past recalling.
